From the description of your post, I understand that you want to use Azure Site Recovery exclude feature while performing replication. Azure Site Recovery supports excluding disks from replication with both the classic and modernized replication appliances. The requirements for excluding disks from replication are the same for both appliances:
- The disk must be a basic disk.
- The disk cannot be the operating system disk.
- The Mobility Service must be installed on the source machine.
Once these requirements are met, you can exclude disks from replication by going to Replication > Replication Settings > Advanced Settings > Disks. From there, you can select the disks that you want to exclude from replication.
Regarding installation of "mobility service agent
